Our founder grew up surrounded by the aromas of a family kitchen where chuy's-style recipes were passed down through generations. Those memories of slow-cooked salsas, handmade tortillas, and laughter around the table became the blueprint for everything we do today.
Since opening our doors in Birmingham, we have welcomed thousands of guests — not just as customers, but as family. The Dream Begins
Founder Marco Gutierrez starts developing authentic chuys recipes in his Birmingham home kitchen, inspired by family traditions and a passion for bold Tex-Mex flavors passed down through three generations.
First Location Opens
Chuys officially opens its first brick-and-mortar location at 216 Summit Blvd in Birmingham. The opening weekend draws over 500 guests eager to experience authentic chuy's-style cuisine in Alabama.
Award & Recognition
Chuys is named "Best New Restaurant" by Birmingham Food Magazine and receives the Alabama Hospitality Award. Our signature Queso Diablo earns a loyal following across the city.
Adapting & Growing
During challenging times, Chuys launches online ordering and local delivery, ensuring our community continues to enjoy their favorite chuy's dishes from the comfort of home. Our team grows to 40+ staff members.
Menu Expansion
We launch our expanded catering service and introduce 30+ new dishes to the menu, including a dedicated plant-based section. Chuys reaches the milestone of serving its 30,000th guest.
Looking Ahead
With 50,000+ happy guests served, Chuys continues to lead Birmingham's food scene. We are expanding our digital ordering platform and working toward opening a second location in 2025.
